This carb-light take on everyone’s favorite seasoning is the go-to salad recipe you’ve been looking for!

Everything But The Bagel Salad. Heart salad filled with fresh veggies, hard-boiled eggs, perfectly seasoned croutons, & everything but the bagel seasoning-rolled cream cheese balls! We pair it with a perctly light homemade vinaigrette.

EVERYTHING BUT THE BAGEL SALAD

This carb-light take on everyone’s favorite seasoning is the go-to salad recipe you’ve been looking for!

INGREDIENTS

Dressing:
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1 teaspoon honey
1/2 cup extra-virgin olive oil
2 scallions, finely chopped
Kosher salt and freshly ground black pepper

Salad:
2 tablespoons unsalted butter
2 large everything bagels, torn into bite-sized pieces
Kosher salt and freshly ground black pepper
4 large eggs
2 tablespoons everything bagel topping (see Cook's Note)
4 ounces cream cheese (1/2 block), cut into 1/2- to 3/4-inch cubes
5 ounces mixed baby greens
4 medium tomatoes, cut into wedges
1/2 English cucumber, thinly sliced
1/2 small red onion, thinly sliced
2 scallions, chopped
4 sprigs fresh dill, leaves only

INSTRUCTIONS

For the dressing:

  1. Whisk together the lemon juice, Dijon, and honey in a small bowl.

  2. Drizzle in the olive oil while whisking until creamy.

  3. Stir in the scallions and season with salt and pepper.

For the salad:

  1. Heat the butter in a skillet over medium heat. Add the bagels and cook, tossing occasionally, until golden and crispy on the outside, about 7 minutes (they'll still be a little chewy on the inside, but that's good). Transfer to a plate, sprinkle with salt, and set aside.

  2. Bring a pot of water to a boil and prepare an ice-water bath. Carefully lower the eggs into the boiling water, reduce to a simmer and cook for 8 minutes.

  3. Transfer to the ice bath to cool (or run under cold water for a little). Peel and slice into halves or quarters.

  4. Place the everything bagel topping in a bowl.

  5. Roll the cream cheese cubes into little balls with your hands and then roll them around in the everything bagel topping.

  6. On a serving plate, arrange the mixed greens. Top with the tomatoes, cucumbers, red onions, bagel croutons, cream cheese balls, eggs, scallions, dill, a few pinches of salt, and a few turns of pepper. Drizzle with the dressing

This Louisville business is turning retro campers into luxury mobile bars

The bars can stock craft cocktails, wine, beer, non-alcoholic drinks and more.

Retro-Campers.jpg

Bring the bar to you.

That's kind of the idea behind the new "mobile bars" now available for rent in Louisville. But mobility is only half the fun. The actual units are absolutely adorable.

Imagine serving up drinks from a retro trailer or even a funky little Vespa.

Right now, "Rose," a small pink trailer, is the only one available. It's equipped with taps and everything you need for a luxury bar experience.

"Dorothy," a 1967 Airstream Overlander, is expected to debut soon, and "Blanche," a southern-style camper, will join the cast in 2022, the website says.

"Sophia," a Vespa, should hit the streets any day now.

Marigold Catering brings Kentucky comfort to Baptist Health

To make sure the health heroes at Baptist Health do eat, the husband-and-wife duo behind Marigold Catering put their aprons on.

Comfort-to-Kentucky.jpg

Many local hospitals ran on empty during the pandemic.

And although many are now finally seeing the light, those same nurses, doctors and cleaning staff are still fighting the pandemic.

At the start of the COVID outbreak, WAVE 3 News shared nonstop stories about companies and local businesses giving back to hospitals. More than a year later, with normalcy in sight, that effort hasn’t stopped.

Baptist Health charge nurse Katie Embry was with COVID patients during their pain and last breaths.

”I work on a palliative care unit,” Embry said. “So it has affected families in their time of loss, and we’ve become people’s family.”

At the peak of the pandemic, Embry said she treated hundreds of patients. The case numbers are going down, but Embry said it feels like every day she still sees and treats COVID.

”We are so incredibly busy providing care, loving on them, supporting them,” Embry said. “We don’t get a chance to eat sometimes.”

To make sure Embry and the other health heroes at Baptist Health do eat, the husband-and-wife duo behind Marigold Catering put their aprons on. Owner Adrienne Cole said they needed something to move them to 2021 after their events came to a halt. That opportunity came with a partnership with Ford Motor Company.

Let me tell you a story. Picture this: Louisville. 2021. A fleet of mobile bars named after “The Golden Girls.”

No, it’s not one of Sophia’s faraway musings about Sicily — it’s a vision created by husband-and-wife duo Kris and Adrienne Cole and brought to life through their business, Marigold Catering Co.

The couple, both hospitality industry veterans, met while working at Mesh, where Kris was a sous chef and Adrienne was a front-of house manager.
